QUICK AND EASY HEALTHY CUCUMBER SESAME SALAD RECIPE
This speedy cucumber salad is enlivened by surimono, a Japanese cucumber salad generally made with salted cucumbers and an improved vinegar dressing. In this variant, we skipped salting the cucumbers and decreased the sugar to a squeeze of garlic and ginger for a delightful dressing.

Ingredients
- 1 Japanese cucumber or 4 Persian mini cucumbers (about 10 ounces)
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- ¼ teaspoon grated garlic
- ¼ teaspoon grated ginger
- â…› teaspoon salt
- Pinch of sugar
- 1 teaspoon sesame seeds
Directions
- Strip the cucumber to leave rotating green stripes. Quarter the cucumber longwise (split longwise if utilizing Persian cucumbers) and cut into 1/2-inch cuts. Pat with a paper towel to eliminate any overabundance of dampness.
